Low Carb Jalapeno Popper Chicken Breast Recipe

 

Jalapeno poppers are one of my favorite indulgences but they just don’t make a very satisfying meal. My low carb jalapeno popper chicken breast recipe helps with the yummy flavor of poppers with the goodness of a lot of healthy protein. These are really easy to create, taking only about 15 minutes to throw together and around 30 minutes to cook.

 

Low Carb Jalapeno Popper Chicken Breast Recipe

Ingredients:

  • 1/2 Cup Crispy Jalapenos (I used Frenches)
  • 2 Eggs
  • 4 Ounces Cream Cheese
  • 1/2 Cup Shredded Cheddar Cheese
  • 2-3 Jalapeno Peppers (seeds removed) minced
  • 4 Chicken Breasts
  • Creole Seasoning

Directions:

  1. Preheat the oven to 375 Degrees Fahrenheit.
  2. Spray a 9 x 13-inch baking dish with coconut oil cooking spray.  low carb jalapeno popper chicken breast recipe

  5. In yet another small bowl, mix together the cream cheese, cheddar cheese, and jalapenos.  low carb jalapeno popper chicken breast recipe
  6. Cut a pocket into the side of each of the chick breasts and season the breasts with creole seasoning.  low carb jalapeno popper chicken breast recipe
  7. Divide the cream cheese mixture evening between the four breasts and fill the pockets and secure with toothpicks.
  8. Dip the chicken breasts in the egg and then the jalapeno crisps and place in the baking dish. low carb jalapeno popper chicken breast recipe
  9. Finally, bake the chicken for about 30 minutes or until fully cooked (165 Degrees Fahrenheit).

My family loves to have chicken on occasion as beef is our staple meal. This low carb jalapeno popper chicken breast recipe is a great change from the normal everyday cooking I do. I try to find the chicken breasts when they are on sale to help save money and stay frugal. It is even better when we raise them on our own but this year we didn’t do that. Next year we’ll be doing that again as we love our organically raised chicken.
