Low Carb Cheese Crackers

I love making these homemade low carb cheese crackers!!

I must have some low carb cheese crackers. I’ve been craving salty crunchy snacks with a huge old passion. (I absolutely miss munching those orange cheese crackers of old.)

There are times that living low carb can get a wee bit tedious. I mean how much meat, cheese and veggies can you eat without getting bored. Trying to come up with new recipes can be hit or miss.

Low Carb Cheese Crackers Ingredients

  • 8 ounces cheddar cheese
  • 1/8 cup nutritional yeast
  • 1/8 cup almond flour
  • 1/8 cup coconut flour
  • 4 tbsp butter
  • Kosher salt
  • Garlic
  • Salt
  • Cayenne

Low Carb Cheese Crackers


Begin by preheating the oven to 300 degrees Fahrenheit. In a large bowl, mix together all of the dry ingredients, flours, cheese, yeast, and seasonings. I like to use a food processor to get them completely combined. Once completely blended, add melted butter to the dry ingredients. Combine the mixture¬†using a wooden spoon. I’ll admit that I end up using my hands to get this “dough” completely blended.

The dough should be slightly dry but still form a ball when pressed together.

Place the dough on a parchment lined cookie sheet or use a silicone mat (I love silicone mats best). Cover the dough with a piece of wax paper and press the dough down to flatten. Get out your rolling pin (I love the RollMaster Rolling Pin as it is comfortable to use and the dough doesn’t stick to it) and roll the dough until it is about an 1/8 inch thick. The thinner it is the more crispy the cracker will turn out.

Cut the crackers using a sharp knife or pizza cutter to the size of your liking (I like them the same size as those cheese crackers of old). You can also roll them into balls and flatten.

Sprinkle the tops of the crackers with a bit of Kosher salt and they are ready to bake.

Place the cookie sheet in the oven for about 20 minutes. Check to be sure they are not getting too brown. When they appear to be evenly browned remove them from the oven and allow to cool on the pan.

Eat and enjoy.

Reheating the Low Carb Cheese Crackers

If your low carb cheese crackers aren’t as crisp as you desire the next day, just throw them back in the oven at 300 degrees for a couple of minutes to crisp them back up.
