Low Carb Apple Pie with Zucchini Recipe

I am CRAVING apple pie, even if it is low carb apple pie. Apple season was here and they were plentiful.
My issue, though, is that I can’t HAVE regular apple pie. You know, that yummy sweet sugar-laden goodness that you have with a scoop of ice cream or a piece of cheese (icky, who does that?). Anyhow, I digress…
Since I can’t have regular apple pie, thanks to my heart issues, I make low-carb apple pie. It really isn’t that hard to make but it is a bit odd sounding.

Low Carb Apple Pie with Zucchini Recipe

Crust:

I use a low carb pecan pie crust for my low carb apple pie. This crust gives it that little extra yumminess. The crust tastes good and has a pleasant texture. Pecan pie crust recipe can be found here: Low-carb pecan pie crust

Filling:

6 Cups Sliced Zucchini
2 tsp Cinnamon
1/2 tsp nutmeg
3 TBS Lemon Juice
2/3 Cup Pyrue

Topping:

1/2 cup Almond Flour
1/2 cup Crushed Pecans
2 Tbs Pyure
1/4 cup unsweetened coconut flakes
2 TBS Butter
2 tsp Cinnamon

Low Carb Apple Pie

Instructions:

1. Place the pie crust blend in a 9-inch pie plate and press to form.
2. Prepare the zucchini by peeling it and removing the seeds and then slice it thinly so that it is the size of apple slices in a typical pie. Of course, the zucchini doesn’t have to be peeled but it does help with appearance if it is removed.
3. In a medium bowl, combine the sliced zucchini, pyure, lemon juice, cinnamon, and nutmeg. Pour the mix into the pie crust. (adjust the sweetener to your taste)
4. Combine the dry topping ingredients in a medium bowl. Then cut in the butter until the mix is crumbly. Sprinkle this mix over the top of the pie.
5. Bake at 350 Fahrenheit for around 50 minutes. Finally, the pie is done when the zucchini is fork tender.

6. Serve the pie with some tasty low-carb ice cream or if you must, with a slice of good cheese.
